This is not a “recipe” as such, but just a quick rundown on G’s favourite lasagne dish.
When I make it he says it seems like he is eating normal food, and he will happily polish off virtually the whole dish.
I use silverbeet leaves in place of pasta to divide the layers. He generally refuses to eat silverbeet (or anything much in the way of greens for that matter), but doesn’t hesitate when its in this.
So, a layer on the bottom of uncooked, rinsed silverbeet, then usually some parboiled cauliflower and/or broccoli, then top with some scd tomato puree or similar, then grated cheese, then the next layer, starting with the silverbeet, and repeating. I will often add some leftover roast pumpkin or cooked lentil stew in the cauliflower layer if there’s some in the fridge.
Usually mix a bit of onion in with the grated cheese, but only on the top layer. Feel free to add parsley, pepper, and any seasonings/herbs of your choice. Bake for about 30 mins.
